Celery Soup Recipe
Ingredients
1 cup vegetable broth or nonfat chicken broth
1/2 teaspoon dried thyme leaves
1/4 teaspoon black pepper
1/2 cup white wine
4 cups skim milk
4 cups thinly sliced celery
2 tablespoons arrowroot or cornstarch
1 onion, finely chopped
1/2 teaspoon dried marjoram leaves
Directions
1.Combine the broth, wine, celery, onion, marjoram, thyme, and pepper in a soup pot. Bring to a boil.
2. Lower heat, cover, and simmer for 25 minutes.
3. Transfer the soup to a food processor or blender and puree.
4. Return the soup to the pot. Add 3 1/2 cups of the milk to the pot.
5. Combine the arrowroot or cornstarch with the remaining 1/2 cup of milk. Slowly add to soup.
6. Stir the soup until it begins to boil. Lower heat at once and simmer, still stirring, for 5 minutes.
