Celery Root Dijonnaise Recipe
A good way to win some compliments from friends and family is to prepare Celery Root Dijonnaise using this recipe. It is the perfect choice for Side Dish. Was it you or the fragrance of Celery Root Dijonnaise that you are cooking that has dragged me to the kitchen?, were my husband's words.
Ingredients
1 celery root
3 tbsp (50 mL) olive or vegetable oil
2 tbsp (30 mL) Dijon mustard
1 tbsp (15 mL) wine or cider vinegar
1/4 tsp (1 mL) salt
Pepper to taste
Directions
Peel and slice the celery root, as for Celery Root Nature.
Place in a microwave-safe dish with 2 tablespoons (30 mL) of water.
Cover and microwave at HIGH 5 to 7 minutes.
Since this is to be served cold as a salad, the celery root should be a little crisp.
Drain and leave uncovered while preparing the dressing.
Mix the remaining ingredients together.
Pour over the cooled celery root.
Toss gently.
Serve in a bowl or surround with thinly sliced cold roast beef or veal.
