Simple Celery Amandine Recipe

Ingredients

 
6 cups diced celery
 
3/4 cup butter or margarine
 
3/4 cup chopped scallions
 
1/4 cup snipped chives or 2 Tb. dried chives
 
1 garlic clove crushed
 
1 tsp. salt
 
1/4 tsp. pepper
 
1 cup blanched slivered almonds

Directions

In a heavy skillet, saute 6 cups diced celery in 16 cup of the butter or margarine.
Cook, stirring constantly, 4 to 5 minutes, until celery is tender-crisp.
Add 3/4 cup chopped scallions, 1/4 cup snipped chives (or 2 tablespoons dried chives), 1 garlic clove, crushed, 1 teaspoon salt and 1/4 teaspoon pepper.
Stir 2 to 3 minutes more.
Celery should still be tender-crisp.
In a small skillet, saute 1 cup blanched, slivered almonds in remaining 1/4 cup butter or margarine.
Stir almonds and browned butter into celery and serve at once.
