Celery & Dried Shrimp Salad Recipe

Ingredients
| Celery | 1 Pound | |
| 1/2 to 1 small fresh hot red pepper | ||
| Dried shrimp | 2 Tablespoon | |
| Hot water | 1 Cup (16 tbs) | |
| Soy sauce | 1 Tablespoon (Seasoning sauce:) | |
| White rice vinegar | 1 Tablespoon (Seasoning sauce:) | |
| Sugar | 2 Teaspoon (Seasoning sauce:) | |
| Salt | 1/2 Teaspoon (Seasoning sauce:) | |
| Garlic | 1 Tablespoon, minced (Seasoning sauce:) | |
Directions
Cut celery apart, rinse and pull off tough strings.
Pound celery with the broad side of a cleaver a few times to release flavor.
Shred with a cleaver.
Place in a medium bowl.
Shred red pepper and mix with celery.
Soak dried shrimp in 1 cup hot water 10 to 15 minutes.
Drain well; discard water.
Chop softened shrimp.
Place celery mixture on a platter.
Top with chopped shrimp.
Mix ingredients for seasoning sauce in a small bowl.
Sprinkle garlic and seasoning sauce on top of celery mixture.
Mix well before serving.
