Celery Chicken Gumbo Recipe
Ingredients
1 tablespoon vegetable oil
3 cups thinly sliced celery
1 cup chopped onion
1 teaspoon minced garlic
8 ounces skinless boneless chicken breast halves, cut into 1/2 inch chunks
2 cans (13% ounces each) low sodium chicken broth
1 can (16 ounces) crushed tomatoes packed in juice, undrained
1/2 cup uncooked regular long grain rice
Directions
Heat oil in large saucepan until hot.
Add celery, onion and garlic; cook and stir about 5 minutes or until vegetables are crisp-tender.
Add chicken; cook about 2 minutes or until chicken turns white, stirring occasionally.
Stir in chicken broth, tomatoes and rice; bring to a boil.
Reduce heat and simmer, covered, about 20 minutes or until rice is tender.
