Celery - 1 head
 
Roquefort cheese - 1/2 lb
 
Soft cream cheese - 1/2 cup
 
Salt
 
Pepper

Directions

GETTING READY
1 Separate the celery stalks.
2 Cut off the parts, which are too narrow to stuff at the ends.
3 Rinse thoroughly.
4 Wipe them dry using a kitchen towel.
5 Run a potato peeler over the outer sides to remove any strings.
6 Cut the stalks into sections about 1 1/2 inches long.

MAKING
7 For the filling: in a bowl, use a fork to break up the Roquefort cheese.
8 Work it into a paste.
9 Gradually beat in the cream cheese until smoothly blended.
10 Season to taste with salt and freshly ground white pepper.
11 Fill the celery canapes with this mixture.
12 Cover with plastic wrap.
13 Place in the refrigerator until needed.

SERVING
14 Serve chilled.
