Ingredients
15 g (1/2oz) butter or margarine
450g (1 lb) celeriac, chopped
4 sticks of celery
100 g (4 oz) cashew nuts
1 litre (1 3/4 pints) water
1 potato, chopped
500ml (18 fl oz) soya milk
Salt and pepper to taste
Roasted cashew nuts and parsley sprigs, to garnish
Directions
Melt the butter or margarine in a heavy pan and saute the celeriac, celery and nuts over a medium heat until they are slightly browned.
Add the water and potato, cover and cook over medium heat for 25 minutes until all the vegetables are tender.
Add the soya milk and puree in a food processor or blender.
Season with salt and pepper.
Return the soup to the pan and heat gently until warm.
Serve at once, garnished with roasted cashew nuts and parsley sprigs.
