Ingredients

 250 g/8 oz peeled celeriac
 60 g/2 oz butter
 150 ml/1/4 pint single cream or milk
 185 g/6 oz curd cheese
 Horseradish1 Tablespoon, creamed
 Lemon juice1 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

Cut the celeriac into small chunks and cook gently, uncovered, in the butter and milk or single cream until soft.
Allow to cool completely then process with the remaining ingredients and season to taste.
