Celeriac Salad Recipe
Ingredients
| Celery root | 1 Large | |
| Broth or water | ||
| Dry mustard | 1/2 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| 1/4 cup tarragon or wine vinegar | ||
| Caraway seeds | 2 Teaspoon | |
| Plain yogurt | 2 Cup (16 tbs) | |
| Sugar | 1 Teaspoon | |
| Cucumber | 1 , thinly sliced | |
| Stalk celery | 1 , sliced | |
| Lettuce | ||
Directions
Peel celeriac.
Cut into bite-sized pieces and cook, covered, in 1 inch broth or salted boiling water until tender.
Drain and cool.
It should make 3 cups.
Mix together mustard, salt, vinegar, seeds, yogurt, and sugar.
Stir into celeriac along with cucumber and celery.
Mound on lettuce.
Garnish with radishes if you like.
