 Celery root1 Large
 Broth or water
 Dry mustard1/2 Teaspoon
 Salt3/4 Teaspoon
 1/4 cup tarragon or wine vinegar
 Caraway seeds2 Teaspoon
 Plain yogurt2 Cup (16 tbs)
 Sugar1 Teaspoon
 Cucumber1 , thinly sliced
 Stalk celery1 , sliced
 Lettuce

Directions

Peel celeriac.
Cut into bite-sized pieces and cook, covered, in 1 inch broth or salted boiling water until tender.
Drain and cool.
It should make 3 cups.
Mix together mustard, salt, vinegar, seeds, yogurt, and sugar.
Stir into celeriac along with cucumber and celery.
Mound on lettuce.
Garnish with radishes if you like.
