Celebration Coffee Cake Recipe
Ingredients
| Margarine | 1⁄3 Cup (5.33 tbs), melted | |
| Pecan halves | 10 | |
| Margarine | 3⁄4 Cup (12 tbs) | |
| Orange juice | 3 Teaspoon | |
| Eggs | 3 | |
| Baking powder | 1 Teaspoon | |
| Milk | 1 Cup (16 tbs) | |
| Light brown sugar | 1⁄3 Cup (5.33 tbs), packed | |
| Sugar | 1 1⁄2 Cup (24 tbs) | |
| Grated orange rind | 1 Teaspoon | |
| Flour | 3 Cup (48 tbs) | |
| Salt | 1⁄4 Teaspoon | |
| Raisins | 3⁄4 Cup (12 tbs) |
Directions
Pour margarine into bottom of well greased and flowered 12 cup bundt pan; cool.
Sprinkle brown sugar over margarine.
Press nuts into sugar mixture.
Cream margarine and sugar until light and fluffy; stir in orange juice and rind.
Add eggs, one at a time, mixing well after each addition.
Sift together 2 3/4 cups flour, baking powder and salt.
Add to creamed mixture alternately with milk.
Combine raisins and remaining 1/4 cup flour; fold into batter.
Carefully spoon batter into pan.
