Gazpacho Recipe

Ingredients
1/2 onion, roughly chopped
1/2 cucumber, peeled and seeded
1/2 green pepper, roughly chopped
1 tblspn chopped fresh coriander
400g chopped canned tomatoes
1 clove garlic, crushed
4 tblspn tomato puree
200ml tomato juice
1 tblspn red wine vinegar
1 stick celery, chopped, for garnish
1 tspn lemon juice
Directions
Place all ingredients, except celery, in a blender or food processor and blend for 30 seconds.
Chill soup before serving and garnish with chopped celery.
