1 1/2 cups flour
 
1 1/8 teaspoons salt
 
1/2 teaspoon cayenne pepper
 
1/2 cup cold unsalted butter, cut into bits
 
1/4 pound sharp Cheddar cheese, grated
 
1 egg, separated
 
3 to 4 tablespoons ice water
 
Worcestershire sauce to taste
 
Poppy seeds to taste

Directions

Sift the flour, 1 teaspoon of the salt, and cayenne.
Add butter and cut in until the mixture resembles coarse meal.
Add the cheese.
Beat egg yolk with ice water and Worcestershire sauce, toss with the flour mixture and form into a ball. (The dough may sit covered and chilled overnight.)
Knead lightly with the heel of a hand to distribute butter, reform into a ball and chill, covered, for 1 hour.
Beat egg white with 2 teaspoons water and remaining salt.
Roll dough between sheets of wax paper into a 1/4 inch thick rectangle, brush with the glaze and sprinkle with poppy seeds.
Gut dough into strips about 5 X 1/4 X 1/4 inches.
Arrange on buttered baking sheets and bake in a preheated 400° F oven for 12 to 15 minutes or until golden.
Let cool on racks.
Stored in airtight containers, the straws will keep for 2 weeks.
