Cauliflower With Avocado Sauce Recipe

Directions
Prepare sauce by peeling the clove of garlic and crushing with salt. Mix in the tahini and lemon juice, beat well and gradually add lemon juice. Then beat in the cold water until the sauce is thick. Fold in the chopped parsley and the mashed avocado. Season to taste. All this can be done in a food processor or blender. Place in bowl, cover and store in the fridge until ready to serve. Break cauliflower into florets and trim any tough stalks. Place in saucepan with 2 cups of boiling water and salt, bring to the boil then cover with a lid. Steam for 10 minutes or until the florets are just tender. Arrange the cauliflower in a serving bowl with the stalks innermost. Spoon over the sauce and serve either hot or cold. Serves 4-8.
