Classic Cauliflower Spaghetti Aglio Olio Recipe Video
For whatever reason, as an adult I kind of forgot about this dish. For me, the cauliflower area of the produce section is certainly not a destination by any means. During a phone call with mom she told me she couldn’t talk any longer as she was just about to drain some pasta for this dish. It brought back so many happy food memories that I ran out and got some cauliflower and went to work. It had probably been 7 or 8 years since I had made this pasta dish and I savored every bite. It was like running into a dear old friend you haven’t seen for a very long time. Enjoy!

Ingredients
Head of cauliflower – 1, large
Spaghetti – 1 pound
Olive oil – 1/3 cup
Butter – ½ stick
Garlic – 6 cloves, crushed
Directions
MAKING
1) Blanch the cauliflower in boiling salted water for a few minutes. Remove the vegetable and put it in cold water.
2) Slice the cauliflower into smaller pieces.
3) To make the sauce, put the butter and olive oil in a pan on medium heat. Let the butter melt.
4) Add the garlic and swirl around for about 15 seconds.
5) Add the cauliflower next, add some water and let the ingredients cook for about 15-20 seconds.
6) Reduce the heat to low and let the mixture simmer for some minutes.
7) Cook the pasta as per the instructions on the package.
8) Add the hot pepper and salt, stir and let the ingredients cook for 10 minutes.
9) Pour the cooked cauliflower sauce over the cooked pasta.
SERVING
10) Top the pasta with your choice of toppings like parsley, grated parmesan, etc., toss once and serve while still hot.
