Cauliflower Crepes With Mornay Sauce Recipe

Ingredients

 
1 small head cauliflower
 
3 tablespoons butter
 
3 tablespoons flour
 
1/2 cup light cream
 
1/2 cup milk
 
1/2 teaspoon salt
 
8 crepes
 
1/2 cup dry bread crumbs
 
1 tablespoon melted butter
 
1/4 cup grated Parmesan cheese

Directions

Break cauliflower in small pieces and cook in salted water until soft.
Drain.
Melt butter; stir in flour and add cream, milk and salt.
Cook over low heat until thickened, stirring continuously.
Add cauliflower.
Fill crepes; fold over and place in greased baking dish.
Mix bread crumbs with butter and cheese.
Sprinkle oh tops of crepes.
Bake at 350°F for 15 minutes or until lightly browned.
