Cauliflower And Tomatoes Recipe
Ingredients
| 1/2 cup water, nonfat chicken broth, or vegetable broth | ||
| Onions | 1 Cup (16 tbs), chopped | |
| 1 1/2 cups low-sodium canned tomato puree | ||
| Green chiles | 2 Tablespoon, chopped | |
| Parsley | 2 Tablespoon, chopped | |
| Ground ginger | 2 Teaspoon | |
| Ground cumin | 2 Teaspoon | |
| Ground coriander | 1 Teaspoon | |
| Turmeric | 1/2 Teaspoon | |
| Cayenne pepper | 1/4 Teaspoon | |
| Cauliflower florets | 6 Cup (16 tbs) | |
Directions
1. Heat 1/4 cup of the water or broth in a heavy saucepan. Add onions. Cook and stir until onions are tender. Add more liquid during this process if necessary.
2. Add tomato puree, chiles, parsley, ginger, cumin, coriander, turmeric, and cayenne pepper. Simmer for 5 minutes.
3. Add cauliflower. Simmer, covered, for 20 minutes or until cauliflower is tender.
