| 1 lb. cauliflower, cut in florets | ||
| Dry bread crumbs | 3/4 Cup (16 tbs) | |

| Parsley | 1 Tablespoon, chopped | |
| 2 to 3 eggs, lightly beaten | ||

| All purpose flour | 2 Tablespoon (Cheese Sauce:) | |
| Milk | 1/4 Cup (16 tbs) (Cheese Sauce:) | |
| Prepared mustard | 1/2 Teaspoon (Cheese Sauce:) | |
| Shredded Cheddar cheese | 1/2 Cup (16 tbs) (Cheese Sauce:) | |
| Cayenne pepper | 1 Dash (Cheese Sauce:) | |

Directions
Boil cauliflower in 1/2 cup water 4 to 5 minutes, drain well.
Combine bread crumbs, Parmesan cheese and parsley together; season with salt and pepper.
Dip cauliflower florets in beaten egg, coat in bread crumb mixture and place on a serving plate.
Set aside.
To make Cheese Sauce, melt butter in a small saucepan, stir in flour and cook 1 minute.
Remove from heat and stir in milk gradually.
Bring to a boil and simmer 2 minutes.
Add mustard, cheese, cayenne, salt and pepper; heat just until cheese melts.
Serve hot.
