Ingredients

 1 lb. cauliflower, cut in florets
 Dry bread crumbs3/4 Cup (16 tbs)
 Parmesan cheese1/3 Cup (16 tbs), grated
 Parsley1 Tablespoon, chopped
 2 to 3 eggs, lightly beaten
 Butter1 Tablespoon (Cheese Sauce:)
 All purpose flour2 Tablespoon (Cheese Sauce:)
 Milk1/4 Cup (16 tbs) (Cheese Sauce:)
 Prepared mustard1/2 Teaspoon (Cheese Sauce:)
 Shredded Cheddar cheese1/2 Cup (16 tbs) (Cheese Sauce:)
 Cayenne pepper1 Dash (Cheese Sauce:)
 Salt To Taste
 Pepper To Taste

Directions

Boil cauliflower in 1/2 cup water 4 to 5 minutes, drain well.
Combine bread crumbs, Parmesan cheese and parsley together; season with salt and pepper.
Dip cauliflower florets in beaten egg, coat in bread crumb mixture and place on a serving plate.
Set aside.
To make Cheese Sauce, melt butter in a small saucepan, stir in flour and cook 1 minute.
Remove from heat and stir in milk gradually.
Bring to a boil and simmer 2 minutes.
Add mustard, cheese, cayenne, salt and pepper; heat just until cheese melts.
Serve hot.
