Directions

–  In a saucepan filled with lightly salted boiling water, cook cauliflower. Rinse under cold water and drain.
–  In a separate saucepan, melt butter and saute green onion and potatoes for 5 minutes, then add cauliflower. Pour milk into mixture and season with salt and pepper. Heat over low heat for 20 minutes without boiling.
–  Run mixture through blender, then return to saucepan and heat for 5 minutes.
–  Adjust seasoning, then pour through sieve and serve.
