Ingredients

| Seasoning | ||
| Fat for frying | ||
| Flour | 4 Ounce | |
| 1/4 pint tomato juice or 2 tablespoons concentrated tomato | ||
| Puree diluted with enough water to make | ||
| 1/4 pint | ||
Directions
Sieve flour, add egg, tomato liquid and seasoning.
Beat well.
Divide the cauliflower into fairly even flowerets.
Cook in a little boiling salted water until just tender.
Drain well, being careful not to let the flowerets break.
Coat each piece of cauliflower with the batter.
Lower into hot fat (shallow fat will be very satisfactory) and cook on both sides until crisp and golden brown.
Drain well.
