 1 small cauliflower, in florets
 Chicken broth6 Cup (16 tbs), heated
 Basil1/2 Teaspoon
 Thyme1/2 Teaspoon
 Bay Leaf1
 Shallots1/4 Cup (16 tbs), chopped
 Salt To Taste
 Pepper To Taste

Directions

In a saucepan, over moderate heat, melt butter.
Add onion.
Cover.
Cook 3-4 minutes until tender but not browned.
Add potatoes and cauliflower.
Continue cooking 1-2 minutes.
Season with salt and pepper.
Pour in broth.
Add mixed herbs.
Bring to a boil.
Cover.
Over low heat, simmer 40 minutes.
In a blender, puree mixture.
Adjust seasoning.
Sprinkle with chopped shallots.
