Cauliflower florets - 1 Lb
 
Extra virgin olive oil - 1/2 cup
 
Garlic - 3 large cloves
 
Dried chili pepper - 1/2 or
 
Cayenne pepper - pinch
 
Macaroni - 3/4 lb
 
Parmesan cheese,freshly grated
 
Salt
 
Pepper

Directions

GETTING READY
1 Clean the cauliflower and divide into small florets.
2 Rinse these and drain well.

MAKING
3 In a large saucepan, bring three quarters full of salted water to a boil.
3 In a wide skillet, heat 1/2 cup oil.
4 Stir fry the minced cloves of garlic with the cauliflower florets over high heat for 2 minutes.
5 Reduce the heat and add 1/4 cup of the boiling salted water , the seeded and crumbled chili pepper.
6 Cover, and simmer for about 10 minutes.
7 Add the pasta in the boiling salted water and boil until barely tender.
8 Drain, reserving 1 cup of the water in a measuring jug.
9 Add half this water and all the pasta to the cauliflower, stir gently.
10 Simmer uncovered until the pasta is cooked completely, adding more of the reserved water when necessary.
11 Season to taste and sprinkle the grated cheese on top.

SERVING
12 Serve at once.
