Cauliflower and Almond Salad Recipe
Ingredients
| Beans | 250 Gram | |
| Cauliflower - 1 small, broken into florets | ||
| Pimento | 1 Can (10oz), chopped | |
| Green olives | 12 , pitted | |
| Spring onions | 2 | |
| Mayonnaise | 3 Tablespoon (FOR THE DRESSING:) | |
| Lemon rind - 2 teaspoons, grated | ||
| Lemon juice | 2 Teaspoon (FOR THE DRESSING:) | |
| Almonds | 1 Tablespoon (FOR THE DRESSING:) | |
| Cayenne pepper | 1 Pinch (FOR THE DRESSING:) | |
| Salt | To Taste (FOR THE DRESSING:) | |
| Almonds | 25 Gram, flaked (TO SERVE:) | |
Directions
MAKING
1) In boiling water, add the beans and blanch for 2 minutes.
2) Drain and cool under running water.
3) Drain again and peel off the skin.
4) In a salad bowl, add the beans and the other salad ingredients.
5) Combine the mayonnaise, lemon rind and juice, almonds, and cayenne pepper.
6) Fold into the salad and mix well to coat.
SERVING
7) Place in a serving dish.
8) Top with almonds and serve.
