 Beans250 Gram
 Cauliflower - 1 small, broken into florets
 Pimento1 Can (10oz), chopped
 Green olives12 , pitted
 Spring onions2
 Mayonnaise3 Tablespoon (FOR THE DRESSING:)
 Lemon rind - 2 teaspoons, grated
 Lemon juice2 Teaspoon (FOR THE DRESSING:)
 Almonds1 Tablespoon (FOR THE DRESSING:)
 Cayenne pepper1 Pinch (FOR THE DRESSING:)
 Salt To Taste (FOR THE DRESSING:)
 Almonds25 Gram, flaked (TO SERVE:)

Directions

MAKING
1) In boiling water, add the beans and blanch for 2 minutes.
2) Drain and cool under running water.
3) Drain again and peel off the skin.
4) In a salad bowl, add the beans and the other salad ingredients.
5) Combine the mayonnaise, lemon rind and juice, almonds, and cayenne pepper.
6) Fold into the salad and mix well to coat.

SERVING
7) Place in a serving dish.
8) Top with almonds and serve.
