Cauliflower Recipe
Ingredients
2 small cauliflowers
Boiling water
1 tablespoon crushed, crisped rinds of bacon
Salt
1/2 cup milk
Directions
Soak the cauliflowers for 1 hour in heavily salted cold water.
Drain.
Plunge them into a pan of boiling water, to which you have added a teaspoon of salt and the milk.
The milk keeps the flowers white.
Cook them until tender but still firm. (It is important that the flowers should not become mushy.)
Drain on a tea cloth.
Dust over with the bacon.
Put under the broiler for a moment.
The bacon rinds give a nice crunch to the dish.
