Ingredients
1/4 cup finely ground cornmeal
1 teaspoon dried dill
1 pound catfish fillets, skinned
1 large egg, slightly beaten
4 tablespoons butter
1 dried chile
1 tablespoon balsamic vinegar
2 tablespoons olive oil
Directions
In a pie pan or wide bowl, combine cornmeal and dill (and a shake of salt, if you like).
Dip catfish into cornmeal, then into egg, then into cornmeal again, coating both sides.
In a small, heavy saucepan, melt butter over low heat.
Add chile and saute until nearly black, but not burnt.
Remove and discard chile.
Add vinegar, stir to blend, and keep warm over lowest heat.
In a heavy frying pan, heat oil over medium heat.
Add catfish and fry for 4 to 6 minutes on each side, depending on thickness.
