For the dough, in a bowl beat the softened butter until creamy.
Add in the powdered sugar and continue mixing at medium speed until it is completely incorporated.
Add in the vanilla extract and continue mixing.
Add the egg, flour, corn starch, and salt.
Mix until you get a smooth buttery dough.
Roll the dough into a ball and cover it with a plastic wrap.
Place it in the refrigerator for 15 minutes.
Preheat the oven to 360 degrees F.
Line a baking pan with parchment paper.
Remove the dough from the refrigerator.
Take a small amount of dough and roll between your palms to get a hazelnut size ball.
Use your finger to flatten the ball.
Press two-thirds of the flattenball with a fork to make it look like a cat’s paw.
Repeat the process with the remaining dough.
Place the cookies on the prepared baking dish.
Place the cookies in the oven and bake for 8-10 minutes. Do not over bake the cookies; they must retain the whitish color.
Over a double boiler, melt the chocolate.
To assemble the cookies, take one cookie and spread the smooth side with the melted chocolate.
Cover it with another cookie aligning properly as shown in the video.
Dip 1/3rd of the cookie in the melted chocolate from the smooth side as shown in the video so that it looks like a black paw with nails coming out of it.
Place the cookies on another prepared dish and place it in the fridge for 1 hour until the chocolate is hardened.
Serve as desired.
