Cassoulet Of Goose Recipe
Ingredients
| Goose Joints - 2-3 pounds | ||
| Dried Broad Beans - 1/2 - 3/4 pounds | ||
| Brown Meat Stock - 1 1/4 - 1 1/2 pints | ||
| Goose Fat - 21/3 to 3 ounce | ||
| Onions | 2 Medium | |
| Garlic - 2 - 3 cloves | ||
| Bacon Slices | 5 , smoked | |
| Tomato puree | 4 Tablespoon | |
| Parsley and Thyme - 1 tablespoon chopped | ||
| Sage - a pinch | ||
| Bay leaf | 1 | |
| Garlic Sausage - 6-8 slices | ||
| White breadcrumbs | 6 Ounce | |
Directions
GETTING READY
1) Soak the beans in water overnight
2) Slice onions and keep aside
3) Lightly crush the garlic and keep aside
MAKING
4) In a pot of water cook the beans on a simmer for 2 ½ hours
5) Drain them into a colander
6) Prepare the stock by cutting the goose into small portions
7) Add the pieces and simmer in a pot of water for flavor till required
8) In a frying pan, add 1 to 1 ½ ounce of fat and fry the goose
9) Remove and keep aside
10) Into the same frying pan, add the garlic and onions and the bacon and fry for 5-6 minutes
11) Then tip in the tomato puree, herbs and the seasoning
12) Strain the stock into a saucepan
13) Bring the stock to a vigorous boil and allow to simmer for 30 minutes
14) Add in the drained beans to the stock
15) In a thick casserole, pout in half the mixture
16) Place the fried pieces of goose into the mixture
17) And put the beans over it
18) Using a knife, slice the sausages
19) And allow it to submerge in the liquid
20) Bring the mixture to a boil and add more seasoning if required
21) Layer in breadcrumbs over the surface
22) Dot the dish with some butter or goose fat
23) Place in the oven to bake for an hour till the beans are cooked and top has turned nice and crusty

24) Serve the dish with some bread and crispy green salad
