Cassis Ice Recipe
Ingredients
| 2 1/2 cups blackcurrant juice | ||
| Water | 1/2 Cup (16 tbs) | |
| Juice of 1 large lemon | ||
| Confectioner’s sugar | 2/3 Cup (16 tbs) | |
| Whipping cream | 2 1/2 Cup (16 tbs) | |
| 8 wafer cookies | ||
Directions
MAKING
1. In a bowl, mix together confectioner's sugar, blackcurrant juice, lemon juiec and water
2. Whip the cream till thick; reserve a quarter cup of it and beat the rest of it with the black currant mixture
3. Pour it into a freezer tray and freeze fro three hours; make sure it is firm
4. When done, dip the freezer tray in hot water to loosen the ice adn cut it into squares
SERVING
5. Arrange wafer cookies on serving dishes, add a dollop of cassis ice and top with the whipped cream before serving
