Ingredients

 
3 pounds boneless pork loin cut into 1 1/2 inch cubes
 
2 tablespoons oil
 
4 leeks, washed and sliced, or 2 onions, sliced
 
2 green cooking apples, peeled,cored, and sliced
 
1 teaspoon cumin powder or curry powder
 
2 tablespoons flour
 
1 1/4 cups apple cider
 
1/4 cup apple brandy or white vermouth
 
1 teaspoon salt
 
Freshly ground black pepper

Directions

Brown the pork in hot oil in a skillet and transfer the cubes to a casserple.
Cook the leeks or onions and apples in the same oil for 3 minutes until softened.
Stir in the cumin or curry powder and cook 1 minute.
Stir in the flour and all the remaining ingredients.
Transfer to a 2-quart glass or ceramic cas serole.
Cover and cook in the microwave oven for 1 hour on "roast" setting.
Rotate the dish one quarter of a turn after 30 minutes.
Allow to rest 10 minutes before serving.
