Casserole of Lamb with Vegetables Recipe
Ingredients
| 2 tablespoons shortening 1/4 | ||
| 3 medium potatoes,diced 3 carrots,diced | ||
| 1 small white turnip,diced | ||
| Parsley | 2 Tablespoon, chopped | |
| 1 1/2 pounds lean uncooked lamb 1 1/2 teaspoons salt | ||
| 1 1/2 pounds lean uncooked lamb 1 1/2 teaspoons salt | ||
Directions
Cut lamb in 1-inch cubes.
Combine seasonings and flour.
Toss well with lamb cubes.
Heat shortening in frying pan.
Add lamb, and cook until light brown, stirring 2 or 3 times.
Add onion, and cook until golden, stirring occasionally.
Turn into 2-quart casserole, and add enough boiling water to cover lamb.
Cover, and bake at 350°F. 70 minutes.
Add potatoes, carrots and turnip, and cook 30 minutes longer or until vegetables are tender.
Garnish with parsley.
