Casserole Of Stuffed Peppers Recipe
Ingredients
| 4 large red or green peppers | ||
| Butter/Margarine | 2 Tablespoon | |
| Onion | 1 Small, chopped | |
| Cooked rice | 1 Cup (16 tbs) | |
| Shrimp | 1 Can (10oz) | |
| Lemon juice | ||
| 1 cup broth or consomme | ||
Directions
GETTING READY
1) Preheat oven to temperature of 350 degrees.
2) From the stem end of the peppers, cut a slice and take out all the seeds and pith.
MAKING
3) In a saute pan, heat the butter and add the onions. Saute till they are soft and then add the rice and shrimp. Season carefully and add the lemon juice to taste.
4) With the mixture, stuff the peppers and arrange them in a casserole which has been buttered. Add the broth and cover the casserole. Cook for about 30 minutes or till the peppers have tendered.
SERVING
5) Serve hot.
