Casserole A La Nelson Recipe
Ingredients
3/4 pound ground beef
4 ounces ground pork
1/2 teaspoon salt
1/2 teaspoon white pepper
1 boiled cold mashed potato
1 egg
3 ounces cream
3 ounces water
3 tablespoons butter
3 yellow onions, sliced
6 uncooked sliced potatoes
1 bottle of beer
2 ounces meat juice
3 small laurel leaves
5 peppercorns
Directions
1. Knead the meat together with salt and pepper.
2. Add the egg and the mashed potato. Dilute with the cream and the water. The mixture should be very smooth and fine.
3. Form the mixture into small oval patties.
4. Heat the butter in a skillet and brown the meat on both sides.
5. Brown the onion slowly in the remaining butter.
6. In an ovenproof casserole layer the meat, potatoes, and onions. Salt slightly and put the laurel leaves and pepper corns in the dish.
7. Pour a little water into the skillet in which the meat and onions were cooked, whip lightly, and pour the water together with the beer over the meat, potatoes, and onions. Cook in a 400°F oven for about 40 minutes.
