Cassava Biscuits Recipe
Ingredients
1 cup all-purpose flour
1 cup cassava meal, cassava flour, or farina
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/2 cup lard
1 51/3 ounce can evaporated milk
Directions
In a mixing bowl stir together flour, cassava meal, baking powder, sugar, cream of tartar, and salt.
Cut in lard till the mixture resembles coarse crumbs.
Make a well in center.
Add milk.
Stir just till dough clings together.
Knead gently on well floured surface for 10 to 12 strokes.
Roll or pat to 1/2 inch thickness.
Cut dough with a 21/2 inch biscuit cutter, dipping cutter into flour between cuts.
Transfer dough to an ungreased baking sheet.
Bake in a 350° oven about 15 minutes or till golden.
