Cassata Alla Sicilian Recipe
Ingredients
2 pounds ricotta cheese
1 2/3 cups sugar
1 teaspoon vanilla
1/4 cup your favorite liqueur .
1/4 cup chocolate bits
1/4 cup diced candied fruit
30 ladyfingers, halved lengthwise
Directions
Place cheese, sugar, vanilla, and liqueur in processor bowl.
Process with metal blade until smooth and light, about 30 seconds.
Add chocolate and fruit and process 2 or 3 seconds.
Line the sides and bottom of a 1 1/2-quart casserole dish or springform pan with lady-finger halves.
Pour in oncthird of the cheese mixture and cover with a layer of ladyfinger halves.
Repeat two more times, ending with ladyfinger halves.
Refrigerate overnight or for 4 to 6 hours.
Carefully invert to remove from mold or remove sides from springform pan.
Garnish with more candied fruit or cherries.
