Cashew Tuna Casserole Recipe
Ingredients
| Tuna | 2 Can (10oz), flaked | |
| 1 1/2 cups chopped cashew nuts | ||
| Mushrooms | 1/2 pound | |
| Onion | 1/3 Cup (16 tbs), diced | |
| Butter/Margarine | 6 Tablespoon | |
| Flour | 3 Tablespoon | |
| Milk | 2 1/2 Cup (16 tbs) | |
| Potato chips | 1/2 Cup (16 tbs), crushed | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Drain tuna and flake.
Mix tuna with cashew nuts.
Saute mushrooms and onion in 3 tablespoons butter until onion is golden.
Add to tuna mixture.
Spoon mixture into shallow 1 1/2 quart casserole.
Melt 3 tablespoons butter.
Stir in flour.
Gradually stir in milk.
Cook over low heat, stirring constantly, until smooth and thickened.
Season with salt and pepper to taste.
Pour sauce over tuna mixture.
Sprinkle potato chips over top.
Bake in preheated moderate oven (350°F.) for about 25 minutes.
