Cashew Pork Stir Fry Recipe
|Boneless lean pork||3⁄4 Pound|
|Stir fry sauce||1 Tablespoon|
|Vegetable oil||3 Tablespoon, divided|
|Celery stalks||2 , cut diagonally into 1/2-inch slices|
|Onion||1 , chunked|
|Green pepper||1 Large, chunked|
|Mushrooms||1⁄4 Pound, sliced|
|Tomatoes||2 Medium, chunked|
|Stir fry sauce||1⁄4 Cup (4 tbs)|
|Roasted cashews||1⁄4 Cup (4 tbs)|

Heat 1 tablespoon oil in hot wpk or large skillet over medium-high heat.
Add pork and stir-fry 3 minutes; remove.
Wipe out pan with paper towel.
Heat remaining 2 tablespoons oil in same pan over high heat.
Add celery, onion and green pepper; stir-fry 2 minutes.
Add mushrooms and stir-fry 2 minutes longer.
Add pork, tomatoes and 1/4 cup stir-fry sauce.
Cook and stir only until tomatoes are heated through.
Just before serving, sprinkle cashews over pork and vegetables.
