Ingredients

 
1/4 cup (60 mL) butter
 
9 to 10 medium-sized carrots, thinly sliced
 
1/4 cup (60 mL) slivered almonds
 
1 tbsp (15 mL) butter
 
1/4 cup (60 mL) light cream
 
1 tsp (5 mL) brown sugar
 
1 heaping tbsp (15 mL) fresh ginger root, grated
 
1/4 tsp (1 mL) salt

Directions

Melt the 1/4 cup (60 mL) butter in a 6-cup (1.5 L) microwave-safe dish 2 minutes at HIGH.
Add the carrots.
Stir until well buttered.
Cover with dish lid or waxed paper.
Microwave 8 minutes at HIGH.
Stir well.
Set aside, covered.
Place in a microwave-safe bowl the almonds and the 1 tablespoon (15 mL) butter.
Microwave at HIGH 1 minute, stir.
Microwave again at HIGH 1 or 2 minutes or until the almonds are a golden color.
Add to the cooked carrots.
Stir and add the remaining ingredients.
Stir again until everything is well mixed together.
This can be done ahead of time, but do not refrigerate.
When ready to serve, stir and reheat 3 minutes at HIGH.
Serve.
