GETTING READY
1)Cut carrots into strips.

MAKING
2)Take a saucepan and add carrot and water to it. Cover and bring to boil.
3)Simmer it on low heat until tender.
4)In a pan, heat butter and sauté almonds for 5 minutes. Remove from pan and keep aside.
5)In another pan, mix together brown sugar, cornstarch, salt, cinnamon and nutmeg.
6)Then, add orange juice and rind. Cook until thickened and clear.
7)Stir in almonds.

SERVING
8)Serve the sauce over hot carrots.
