Carrots In Cider Recipe
I originally made this Carrots In Cider for my spouse but I can't stop eating it now! This Carrots In Cider when served as Side Dish is sure to please your family members. In my view, if one calls oneself a good cook, one must have a personal recipe of Carrots In Cider, just like I do.
Ingredients
3 cups sliced carrots
1 cup apple juice
1/2 teaspoon sea salt
Optional:
1 tablespoon butter
1 1/2 teaspoons grated orange peel
1 1/2 teaspoons grated lemon peel
Directions
Cover the carrots with the apple juice in a saucepan.
Cover saucepan and simmer until tender.
Add a little water if necessary.
Uncover.
Simmer until any extra moisture is absorbed and liquid is syrupy.
Add sea salt to taste.
Melt butter.
Add lemon and orange peel.
Pour over carrots and heat through.
For glazed carrots, add 2 tablespoons raw honey.
Cover saucepan and simmer until tender.
