 Carrots3 Cup (16 tbs), sliced
 Apple Juice1 Cup (16 tbs)
 Sea salt1/2 Teaspoon
 Butter1 Tablespoon (Optional:)
 Orange peel1 1/2 Teaspoon, grated (Optional:)
 Lemon peel1 1/2 Teaspoon, grated (Optional:)

Directions

Cover the carrots with the apple juice in a saucepan.
Cover saucepan and simmer until tender.
Add a little water if necessary.
Uncover.
Simmer until any extra moisture is absorbed and liquid is syrupy.
Add sea salt to taste.
Melt butter.
Add lemon and orange peel.
Pour over carrots and heat through.
For glazed carrots, add 2 tablespoons raw honey.
