1.Grate carrots with coarse side of a grater or put it through the coarse disc of a food processor.
2.Refrigerate covered until required.
3.Mix together vinegar, salt, sugar, pepper, and the oils in a screw-top jar.
4. Shake well.
5.Pour over the carrots.
6.Toss together he dressing and the carrots.
7.Garnish with parsley and serve.
