Carrots Glazed With Orange And Ginger Recipe

| 3 strips orange peel, each about 2 inches long and 1/2 inch wide | ||
| 8 medium size carrots, peeled and sliced 1/2 inch thick | ||
Directions
Melt the margarine in a medium size heavy saucepan, add the orange juice, ginger, and orange peel, and bring to a boil.
Add the carrots and adjust the heat so that the orange juice bubbles gently.
Simmer, uncovered, until all the liquid has evaporated and the carrots are tender and nicely glazed 10 to 12 minutes.
