Ingredients
| 2 cups DANNON® Plain Nonfat or Lowfat Yogurt | ||
| Packed brown sugar | 1 Tablespoon | |
| Orange peel | 1/4 Teaspoon, grated | |
| Orange juice | 2 Tablespoon | |
| 1/4 teaspoon ground nutmeg or cardamom | ||
| Salt | 1 Pinch | |
| 6 to 7 medium carrots, peeled and coarsely shredded | ||
| Raisins | 3/4 Cup (16 tbs) | |
| 3 tablespoons chopped cashews, almonds or pecans | ||
Directions
Spoon yogurt into large strainer lined with double thickness of cheesecloth or a coffee filter.
Place bowl beneath, but not touching strainer to catch liquid.
Chill 1 1/2 hours.
Scrape yogurt into a medium bowl.
Discard liquid.
Add brown sugar, orange peel and juice, nutmeg and salt; stir until smooth.
Add carrots and raisins; toss to coat.
Cover; chill 20 to 30 minutes before serving.
