Mom'S Carrot Soup Recipe
The flavor of this Carrot Soup recipe has occupied my mind so much that I almost never consider any other Carrot Soup recipe. Use the freshest of Vegetable available to get a flavorful Carrot Soup. Ingredients
1 teaspoon vegetable oil
Vegetable cooking spray
1/2 medium onion, chopped
1 large dove garlic, minced
6 medium carrots, scraped and sliced
1/8 teaspoon pepper
1 tablespoon all-purpose flour
4 cups water
2 teaspoons chicken-flavored bouillon granules
Fresh dill sprigs (optional)
Directions
Pour vegetable oil into a large skillet coated with cooking spray; place over medium heat until hot.
Add onion and garlic, and saute until tender.
Add sliced carrots and pepper.
Cover and cook over low heat 15 minutes or until carrots are tender.
Stir in flour, cook 1 minute.
Add water and bouillon granules, bring to a boil.
Reduce heat, and simmer, uncovered, 5 to 10 minutes, stirriwg occasionally.
Cool.
Transfer mixture in batches to a blender or food processor.
Process until smooth.
Chill thoroughly before serving.
Garnish with fresh dill sprigs, if desired.
