Carrot-Raisin Muffins Recipe

Ingredients
2 1/2 cups wheat bran flakes cereal
1 cup skim milk
1 egg, beaten
3 tablespoons vegetable oil
1 cup all-purpose flour
1 tablespoon baking powder
3 tablespoons firmly packed brown sugar
1 teaspoon ground nutmeg
1/8 teaspoon salt
2/3 cup grated carrot
1/4 cup raisins
Vegetable cooking spray
Directions
Combine cereal and milk in a large bowl; stir well.
Let stand 3 minutes.
Combine egg and oil in a small bowl; mix well.
Add egg mixture to cereal mixture, stirring well.
Combine flour, baking powder, sugar, nutmeg, and salt, mixing well.
Add to cereal mixture; stir just until blended.
Stir in carrot and raisins.
Spoon batter into muffin pans coated with cooking spray, filling three-fourths full.
Bake at 400° for 20 minutes or until golden brown.
