Carrot Pie Recipe

Carrot Pie is a well loved dish that is often made again and again at my home. Try this Carrot Pie recipe for yourself and you will understand why it is so addictive!

Ingredients

 
1 1/2 c. cooked mashed carrots 375 mL
 
1/2 c. unsweetened applesauce 125 mL
 
4 Tbsp. sugar 60 mL
 
1/2 c. brown sugar 125 mL
 
1 Tbsp. flour 15 mL
 
1 tsp. cinnamon 5 mL
 
1/4 tsp. allspice 1 mL
 
1/4 tsp. nutmeg 1 mL
 
1/8 tsp. ground cloves 0.5 mL
 
2 eggs, beaten
 
1 c. evaporated milk 250 mL
 
1/2 c. milk 125 mL
 
1 tsp. vanilla 5 mL
 
23 cm unbaked pie shell 23 cm
 
Unsweetened whipped cream

Directions

Preheat the oven to 450°F (230°C).
Combine all the ingredients except the pie shell and whipped cream in the order given.
Mix well and pour into the unbaked pie shell.
Bake at 450°F (230°C) for approximately 15 minutes Reduce the heat to 350°F (180°C) and bake the pie for a further 40-50 minutes.
Bake until a knife inserted in the centre comes out clean.
When the pie is completely cool, decorate with unsweetened whipped cream.
