Ingredients

 
1 cup all-purpose flour 250 mL
 
1 cup oat bran 250 mL
 
2 tsp baking soda 10 mL
 
l tsp baking powder 5mL
 
1/2 tsp salt 2mL
 
2 tsp cinnamon 10 mL
 
1 cup packed brown sugar 250 mL
 
11/2 cups shredded carrots 375 mL
 
2 large apples, shredded
 
1/2 cup raisins 125 mL
 
1 cup chopped pecans 250 mL
 
1/4 cup vegetable oil 50 mL
 
1/2 cup skim milk 125 mL
 
2 eggs, lightly beaten

Directions

In a large bowl, combine flour, oat bran, baking soda, baking powder, salt and cinnamon.
Add sugar and mix well.
Stir in carrots, apples, raisins and pecans.
Make a well in the center.
Add oil, milk, eggs and vanilla, stirring just until moist and blended.
Spoon batter evenly into prepared muffin tin.
Bake in preheated oven for about 20 minutes.
