Carrot Marmalade Recipe
Ingredients
| Carrots | 2 Cup (16 tbs) | |
| Juice and ground rind of 1 lemon | ||
| Juice and ground rind of 1 orange | ||
| Sugar | ||
Directions
Mix carrots, lemon rind and orange rind; stir in 4 cups water.
Boil for 30 minutes.
Measure carrot mix- ture; add lemon juice, orange juice and sugar to equal carrot mixture.
Simmer, stirring frequently, until glazed and thick.
Pour into sterilized jars; seal with melted paraffin.
