1. Cut each carrot into half horizontally. Slice each half into further half lengthwise. Make “V” shaped cut into the core and remove it. Cut the carrots in little cubes.
2. In a pot, bring water to boil on medium heat. Add the carrots and garlic cloves. Let them cook for 15-20 minutes. Drain the carrots and garlic from the water.
3. In a cooking pan, heat olive oil, add the cooked carrots with the garlic, parsley and the spices. Stir constantly and mash the carrots while they are cooking. This will take around 20 minutes. Turn off the heat.
4. In a serving plate, serve the carrot salad with crusty bread or as it is.
This salad can be served warm or cold depending on the season.
