Carrot Kosambari Recipe
One of the simplest and easy to make salad.

Ingredients
3 carrots (Grated)
4 green chillies (Finely chopped)
1 tbsp cilantro (chopped)
2 tsp fresh desiccated coconut
1 tsp oil
1/2 tsp mustard seeds
1/2 lemon
salt to taste
4-5 curry leaves
Directions
1. In a bowl take grated carrots.
2. To this add green chillies, coconut and cilantro.
3. Heat oil in a pan and add mustard seeds. When they splutter, add curry leaves. Pour it over the carrots.
4. Add salt to taste and squeeze out a lemon. Mix everything.
5. Serve.

Oh I see...that is the reason why I am not getting the curry leaves from past two weeks. I can't even imagine chutney or dal without curry leaves :(

This salad is a wonderful way to get some carrots (vitamin A) into the system! When I read 'curry leaves' in the ingredients, I just remembered that the agricultural department has banned the entry of curry leaves into the U.S ( well..that is what my desi-store guy had told me).
