Carrots- 4-5 medium sized(grated)
Moong dal-1/4 cup
Coconut-grated- 4 tbsp
Mustard seeds- 1 tsp
Urad dal(black gram)-1 tsp
Hing (Asafoetida)-1 tsp
Green chillies-3-4 (slit)or finely chopped
Curry leaves(optional)-chopped and coriander leaves-chopped for garnishing
Juice of one lemon
Salt to taste
Oil-1 tsp
Directions
soak green gram in water for 30-45 min.In a salad bowl, mix the grated carrots, soaked moong dal (after straining excess water), coconut, curry leaves, coriander leaves, salt, lime juice.
Fry the seasonings (mustard, urad dal(black gram), green chillies,hing) in oil till they splutter and add this to the salad.
Mix well and serve
