Carrot Delight Recipe
Get started on eating healthy. There sure is no better health food than vegetables. This carrot delight is a great way to introduce more vegetables in your daily diet.
Ingredients
| 2 c. mashed cooked carrots | ||
| Milk | 1 Cup (16 tbs) | |
| 1 c. cracker crumbs | ||
| 1/2 c. grated sharp cheese | ||
| Onion | 1/4 Cup (16 tbs), grated | |
| Soft butter | 1/3 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Pepper red | 1/8 Teaspoon | |
| Eggs | 3 , beaten | |
Directions
Combine carrots, milk, crumbs, cheese, onion, butter, salt, pepper and red pepper; mix well.
Fold eggs into carrot mixture.
Pour into well-oiled 1 1/2-quart ring mold.
Bake in 350-degree oven for 30 minutes.
Turn out onto hot platter; fill center with buttered green peas, if desired.
Garnish with sprigs of parsley.
